Wellness in the Garden Program at Eagleton Elementary

Wellness in the Garden is a is a holistic nutrition and physical program comprised of gardening, cooking, and market related activities, created by Slow Food and Learning Landscapes.  This after-school program is being piloted at Eagleton Elementary through a grant from the Westside Healthy Exercise and Nutrition Program of LiveWell Colorado.

Educational Component

The program is hands-on gardening and cooking, organized around the seasonal activities of the garden. It holistically develops students’ understanding of the gardening, cooking, nutrition and physical activity, business development (through youth markets), science education, and social & cultural studies.

Staff Westwood

With almost twenty years of experience in teaching and the culinary profession, Gigia Kolouch is first and foremost an advocate for home cooking and the celebration of local food culture. She has owned her own business for 15 years while developing classes, writing recipes and teaching students of all ages. Over the years, she has taught at the Kitchen on the Green, the Culinary School of the Rockies, the Seasoned Chef, the Starkey Institute, and has directed the Alfalfa’s Market Cooking School.

Norma Vazquez is a gardener extra-ordinaire, with many years of experience gardening both in the United States and in Mexico. She also serves as a teaching assistant and community liaison, working at Eagleton Elementary School for over four years.
